2008 Reserve Cabernet Sauvignon – Horse Heaven Hills Reserve
The ‘king of the grapes’ this is a big, focused wine, that was aged on French & American oak for over two years. It has deep body & color, with strong tobacco overtones and dark determined fruit; just what you expect in a good Cabernet. We’ve softened this release by a touch of Merlot, but you will still find the lingering smack of light tannins to keep you coming back for more…
Food Pairings: red meats, flavorful and heartier (red) pastas, lamb, strong-flavored cheese, and chocolates (especially dark).
Winemaker’s Notes: I was really lucky on this wine, I made this wine for me! I like them big, strong, dry and a little tannic on the finish. It was aged 30 months on French and American Oak with little intervening winemaking ‘science’… I let the wine make itself. In blending trials I noted that the HHH fruit needed to be softened up so some of the more fruit forward Walla Walla Cab and a spot of Merlot was added to provide some depth. I’ve tasted many Cabs from the NW and think this one is really a winner. 90% Cabernet, 10% Merlot.
