“Safe-Cracker” Syrah – Walla Walla
Dark plum and tobacco on the front end, along with spicy, peppery flavors and soft tannins on the finish. This wine develops as you enjoy it; as layers of dark fruit and spice flavors unveil themselves upon each sip. Ours is full bodied, with rich round flavors of black cherry, blackberry, plum, bell pepper, black pepper, clove, licorice, and dark chocolate. Aged 28 months in small French and American Oak barrels.
Definition: Shiraz is touted as a spicy, big-hitting red wine. The grape has deep-purple color and produces medium to full-bodied wines.
Food Pairings: Syrah is great for grilled meats or veggies, wild game, richly flavored red meats, beef stew and meat lover’s pizza
Winemaker’s Notes: You say “Shiraz,” I say “Syrah” – it’s the same grape. In France it is known and grown as Syrah, and responsible for some of the Northern Rhone’s big, bold red wines. However, in Australia and South Africa it goes by “Shiraz.” Deep plummy and dark blackberry fruit notes with a hint of tobacco & mocha. This wine was in barrel for nearly three years and over another year in the bottle before it was released. It took some time for the spicier characteristics to mellow out and create a balanced wines. Syrah can sometimes be too ‘hot’ and one dimensional, but the extra aging allowed this wine to become more layered and complex.

From I-5 southbound take Exit #282a (Canby). Stay on road through first light, take left at second light- Ehlen Rd (about 2.5 miles). Go left (east) approximately 1 mile.
From East Portland via 205:
Take Oregon City Hwy 99E exit . Go south through Canby into Historic Aurora (approx 15 miles) – Hwy 99E runs through the town.
I-5 North from Salem
Take Exit #278. Head east approximately 3 miles on Ehlen Rd.
